Stewed Cucumbers in a Stinging-Nettle-Mustard Sauce on Pearl Barley

I feel like 3.000 cucumbers our garden are ripe at the same time. You can't pickle them all, now can you? Well, you could. But there are so many other great meals you could prepare! Like stewed cucumber! :-D



Get the pearl barley cooking first. It takes about 30 minutes to be ready, so get started on time.


Then prepare the cucumbers: Chop an onion and glase it in some oil. Now cut the cucumbers into sticks or discs and add them. In go a handful of mustard seeds, a big spoonful of mustard, a spoonful of currypowder, salt and pepper.

Take a big handful of stinging nettle leaves, and add it to the pot with a can of coconut milk. Stir and let this cook with the lid on. Cut a tomato into dices and throw it in. This adds some sourness that goes very well with this dish.
