Quick and Easy Cauliflower and Hemp Soup (vegan)

We're having soup today! We had some leftovers from our cauliflower-schnitzels and here's what we made of it:



A soup is a great dish, especially in the evening when you don't want to burden your stomach. Thanks to our Vitamix, we don't have to prepare a lot. Everything goes in and gets blended to soup. ;-)

What you need is:

  • 3 potatoes

  • one cauliflower head

  • 2 shallots

  • 1 white or yellow carrot

  • 2 Laurel leaves

  • 3 juniper berries

  • clove buds

  • some broth powder

  • pepper,salt

  • some nutmeg

  • 1 cup of peeled hemp seeds to replace cream.

  • some breading

  • chilis

  • olive oil

  • herbs to your taste (z.B. rosemary, parsley, dill)

Peel the vegetables, cover them with water, add some broth powder. The clove buds, juniper berries and laurel leaves are put into a tea-egg and added to the cooking pot.



You cook it all until the veggies are soft. Then add the hemp seeds and blend.



For the topping we added the breading to some olive oil in a pan. The we put in some chilis and the herbs. Stir and put it on your soup just before serving. To finish off, add a spoonful of olive oil on top.



Mhmm!
